Food That’s Fast: Baked Brie

When I’m feeling nostalgic I like to make a meal inspired by that feeling. This is how I time travel, sort of like Quantum Leap, but not really.

“Paris is always a good idea.” I’ve probably been to Paris something like 8 times, and every time I discover something wonderful and new. In this case that inspired baked brie for today, it was 10 years ago now and we were traveling to Birmingham for a friend’s wedding and we decided to make two stopovers, one in Ireland and one in Paris.

I ended up planning our jaunt in Paris because I knew it the best. We stayed at a tiny budget hotel in the 18th arrondissement by the name of Hôtel Bonséjour Montmartre and across the street from our hotel was the loveliest dinner spot whereby we’d have our last meal in Paris. For an appetizer we had a baked camembert drizzled in honey and covered in toasted pine nuts. It was my first time trying camembert and I fell in love.

Not sure why, but today I was reminded of that trip and promptly headed to Whole Foods to grab the goods to make a delicious french inspired lunch.

Things You’ll Need

  • 1 sweet baguette – I picked Acme Bread because I just love their bread so much
  • 1 bag of grapes
  • 1 8 oz brie wheel
  • Honey
  • 3 tbsp of pine nuts
  • Red wine
  • Truffle pâté

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Put brie wheel on a baking sheet or on foil on a baking sheet and once the oven is at 350 put it into the oven for about 12-15 minutes
  3. Toast pine nuts on light toast setting, because pine nuts are high in oil content they burn easily. I watch mine like a hawk after burning a set while toasting for a pesto recipe before.
  4. Toasty

  5. Slice the sweet baguette
  6. Wash grapes and set aside
  7. Grapes

  8. Pour wine
  9. Remove brie from oven once it’s bubbly
  10. Generously drizzle honey and sprinkle pine nuts over the brie after poking a hole in the top of it.
  11. Plate everything.
  12. Plated

That’s basically it.

I ended up pairing this delicious and simple meal with watching The Walk starring Joseph Gordon-Levitt, a movie about a French high-wire artist who dared to walk between the World Trade Center towers as they were being built.
